| Billy Bob Barnett's Texas Style Chili |
10 pounds ground chuck
1 cup hot chili powder
1 cup chili powder -- (mild)
3/4 cup paprika
1/2 cup cumin
1/4 cup garlic powder
1/4 cup salt
1/8 cup crushed red pepper
1 pound suet
3 quarts water
1/4 cup sugar -- add 20 min before
Add fat first, then meat and seasonings to fat. Add
water after it cooks 2
hrs.
Cook 3 hrs total. Stir occasionally. Now that's Texas Chili!
(Although I
usually throw in Shiner Bock Beer for part of that water.)
This is real good
with raw chopped onion on top (plus the ubiquitous saltines).
